Fruity overnight oats

This recipe was inspired by a breakfast I had in Medellin, Colombia. It was so simple but yummy, and looked amazing, so I had to recreate it at home, and the results were perfect 🙂

Fruity Overnight Oats

For the oats:

1/2 cup steel cut rolled oats*

1/2 cup oat milk (or other plant milk), or more if you prefer it less thick

2 tbsp coconut yoghurt

1 tbsp chia seeds

1 tsp vanilla extract (optional)


1/2 apple, thinly sliced

1/2 mango, cubed

3-4 strawberries, sliced

1 tbsp goji berries

Drizzle maple syrup (optional)



Make the overnight oats by combining all the ingredients and leaving for at least 5 minutes, or overnight (the longer you leave it the thicker it will go. *If you are using larger steel cuts oats then it’s better to leave it overnight, but you can also use normal porridge oats (softer and flakier) and just leave it for 5 minutes. It will be runnier and more like cold porridge but just as yummy 🙂 ).

When you’re ready to eat, add the fruit and goji berries in a pretty pattern of your using and top with a drizzle of maple syrup if desired!
